The Chef-Master of Indian Cuisine & Indo-Chinese Fusion

The Spice Palette is the vision and creation of Chef Lijoy, whose culinary journey spans over 20 years of mastering traditional Indian cuisine and modern Indo-Chinese fusion. Beginning his career as a pastry chef at the world-renowned The Leela Goa Hotel, Chef Lijoy soon discovered his passion for the rich flavors of authentic Indian cooking. His dedication, creativity, and expertise quickly elevated him to the roles of Sous Chef and then Executive Chef. Over the years, he has led kitchens at acclaimed Indian restaurants across Massachusetts, New York, and Connecticut. Now based in New London, CT, Chef Lijoy brings his culinary artistry and leadership to The Spice Palette, offering guests a menu that blends tradition with innovation.
